The experience
You'll work through the recipes yourself (whether it's Seafood Moqueca or Black Bean Feijoada, depending on the day) guided step-by-step by an experienced Brazilian chef. The ingredients are ones you can find at home, so you'll actually be able to recreate these dishes after you leave Rio. You start by learning to make a Lime Caipirinha with a zesty twist, then move through fried halloumi cheese with spicy guava jam, clambered fried sausage slivers, and the main dish, all while the chef answers your questions and shows you the techniques that make Brazilian cooking work.
After everything is cooked, you sit down together to eat what you've made, toasting your efforts over the meal. The Batida de coco and caipirinhas come with the food, and dessert is whatever the chef has on hand: brigadeiro, doce de leite, or fresh exotic fruit, depending on what's available that day. With no more than seven people in the class, you get real attention and a chance to ask as much as you want.
The studio is located in Copacabana, and the class runs three hours. No cooking experience is required. The point is to have fun and learn something real about Brazilian cuisine and culture, whether you're starting from scratch or you already know your way around a kitchen.
Is this one for you?The fixed group size of seven means real hands-on instruction instead of watching a demonstration, and the schedule varies by day only in which main dish you cook. Pick the day that fits your calendar and the recipe you want to learn.
