You leave with the recipes and the gear to make these dishes at home.

A two-hour cooking class in Mississippi limited to eight guests where you learn Chef Regina's techniques for butter biscuits, shrimp in smoked tomato cream over grits, and French omelets with herbed cheese and mushrooms, then sit down to eat the full menu together. Classes run Saturday mornings at 10 a.m. Bring your own champagne, vodka or other spirits for mimosas and bloody Marys, and Regina will set up whatever glassware you need. You leave with a printed tea towel carrying her biscuit recipe and a biscuit cutter.

The experience

Two hours on Saturday morning means you learn four techniques in one class: how to make Regina's butter biscuits from scratch, oven-smoke tomatoes, build a béchamel that becomes the base for shrimp and grits in smoked tomato cream, and fold a French omelet with Boursin and mushrooms. Regina walks you through each one, and the class stays under eight people so there is room to ask questions and watch her hands work.

After you cook, everyone sits down to eat what you made. Bring champagne for mimosas or vodka for bloody Marys (Regina stocks bottled water and juice), and you'll eat the full brunch menu with the other guests in the class. It is the part people come back for: the food tastes different when you made it yourself an hour before.

You leave with a tea towel printed with Regina's biscuit recipe and a biscuit cutter, so the class doesn't end when you walk out the door. Children are welcome from age 10.

What’s included

  • Two-hour instruction in four cooking techniques.
  • the full brunch menu to eat together after class.
  • bottled water and juice.

What exactly do I learn to make in this class?

You learn Regina's butter biscuits, shrimp in smoked tomato cream over grits, and French omelets with herbed cheese and mushrooms. Each technique builds on the last (the béchamel you make for the shrimp is the same base you use in the omelet), so by the end of the morning you understand how these dishes connect.

Do I need to bring my own alcohol, or is it provided?

You're welcome to bring champagne, vodka or any other spirits you like for mimosas and bloody Marys. Regina doesn't provide alcohol, but she'll have the glassware and setup ready for whatever you bring, and bottled water and juice are available for everyone.

How many people will be in the class?

Classes are limited to eight guests, so there is room to move around the kitchen and get hands-on help from Regina without feeling crowded.

What do I get to take home?

You leave with a tea towel printed with Regina's biscuit recipe and a biscuit cutter, so you can make these biscuits again at home.
