The experience
You'll work through four distinct techniques in one session, each one building on the last. Start by pulling thin noodles and chilling them in a bright yuzu ponzu with garlic butter and poached shrimp. Move into the main course: hand-pulling flat noodles and simmering them in a deeply savory spicy miso broth topped with smoked pit beef, soft-boiled miso eggs and homemade chili oil. The side teaches you the dumpling fold: hand-shaping cabbage and shiitake gyozas, then pan-searing them to serve with a citrus-soy dipping sauce. Finish with a silky almond tofu dessert paired with matcha apple salad and blueberry compote.
The class runs 2 hours with a live guide in English, and the space is fully wheelchair accessible. All ingredients and cooking tools are provided, so you arrive ready to work. You'll leave with the recipes written out so you can pull noodles and build these broths at home. The operator accommodates dietary needs in advance. Let them know what you need when you book.
