The morning begins at the farmers market, where you walk past vendors selling self-harvested olives, wild seasonal greens, vegetables, homemade noodles, jams, pickles and cheeses. You shop for the specific ingredients your lunch will need. Five mezze made with self-harvested olive oil, a hot starter wrapped in phyllo, and a main course decided on the day. An air-conditioned vehicle then takes you to the kitchen near Bodrum, set above the Bargilya lagoon.
Once there, you either watch the cooking sessions while sipping wine or join in hands-on. The class walks through the regional Aegean approach: olive oil and fresh herbs as the foundation, not afterthoughts. You'll receive written recipes to take home so you can remake the dishes yourself. A dessert is served but not cooked during the class.
Lunch happens at shared tables where the instructor shares stories of Turkish cooking traditions and family recipes while you taste the dishes you've made alongside local wines. Bottled water, coffee and tea are provided throughout the day.
