You cook your chosen set of dishes, sit down to eat them, and leave with recipes and a certificate of achievement.

The experience
The class starts with hotel pickup from the south of Karon Beach and a 30- to 45-minute market tour where your instructor teaches you to identify the herbs, vegetables and spices that define Thai cooking. You'll see how a real Thai market works (the colors, the sounds, the vendors), and learn which ingredients go into the dishes you'll cook that afternoon. The school also maintains a small organic farm on the grounds, so you get a sense of where the food actually comes from.
Once you're back at the open kitchen in the tropical garden, you have two to three hours of hands-on cooking with a certified Thai teacher. Groups stay at four people maximum, which means the instructor can watch your technique and adjust as you work. You choose one menu set at booking: either three dishes (fried noodles or egg, papaya salad, galangal coconut soup) or five dishes (add penang curry, spicy sour soup, and tofu salad to the three-dish set). All ingredients are provided, along with tea, coffee and filtered water during class. You cook everything yourself, not watch a demonstration.
After the lesson ends, you sit down and eat the dishes you've made. The class wraps with hotel transfer back to your accommodation, plus recipes for each dish and a certificate of achievement. English instruction is available throughout.
