The experience

The class starts at a vibrant morning market where you learn to identify and select Thai herbs, vegetables and spices that form the backbone of traditional flavors. You pick the ingredients you'll use later, so you understand where each element comes from before you cook with it. Then you move into a small, semi-private kitchen where the real work begins: you'll pound chili paste with a mortar and pestle, balance the four essential Thai tastes, and build each dish from scratch under the guidance of Suwannee, who has been teaching this class since 2007.

The menu covers northern Thai staples and a dessert. You make papaya salad with its crisp, crunchy texture and bold lime-and-fish-sauce bite; tom yum soup, the hot-and-sour classic infused with lemongrass and galangal; khao soi, the rich curry noodle soup that defines Chiangrai's food; and mango with sticky rice to finish. By the end of the session, you sit down to eat the multi-course feast you cooked yourself, and you leave with an online recipe so you can make these dishes at home.

Private transportation picks you up and brings you back, and the class accommodates vegan and vegetarian diets. Bottled water and snacks are provided throughout the morning.

Is this one for you?Groups of up to 12 work best here, so you're learning alongside others but still getting personal attention from the instructor. If you want hands-on cooking instruction rather than watching a demonstration, and you'd rather pick your own ingredients at the market than have them pre-selected, this class gives you both.
