The Jungle Kitchen sits up in the hills near Fisherman’s Village, but honestly, it felt like we’d wandered way further than that. Our guide, Pim, handed me a bunch of kaffir lime leaves and grinned when I tried to pronounce them in Thai (I definitely didn’t nail it). She kept things relaxed, switching between English and French for the others at our table. I liked that she asked about our favorite dishes before we even arrived—made it feel less like a class and more like being invited over to cook with friends.
The garden tour was my favorite part, maybe because you actually get to pick what you’ll use later. Mint smelled sharper than I expected; the galangal root was still muddy from last night’s rain. We ground curry paste by hand—elbow grease required—and by then the air was thick with chili and garlic. There was a moment when someone from the elephant sanctuary next door shouted something and everyone laughed (no elephants visible though, just their distant trumpeting). Cooking over charcoal took longer than I thought but somehow made everything taste richer. The sun started fading behind Koh Phangan while we stirred noodles and tried not to burn anything.
Dinner happened outside at this long wooden table under string lights. It was messy—in a good way—with bowls passed around and people trading bites of pad see ew for spoonfuls of curry. Pim told us stories about her grandmother’s kitchen growing up on Samui; I think that stuck with me more than any recipe did. By the end, there was this easy feeling between all of us—even if my curry came out too spicy (Pim said “it wakes you up!”). Recipes landed in my inbox a few days later but honestly, I still remember the smell of charcoal on my hands more than anything written down.
