You'll meet Bung or Mong at your hotel at 9am or 4pm — they're the ones running this, and they'll pick you up without fuss. The first stop is the local market in Bophut, where you spend about thirty minutes learning what goes into Thai cooking before you even touch a pan. Your guide points out the spices, the vegetables, the ingredients that look unfamiliar, and suddenly you understand why a dish tastes the way it does. It's not a long walk, just enough to get your bearings and ask questions.

Then you head to the cooking space — a home with a garden — and that's where the actual work starts. You'll choose four dishes to cook as a group, and because the class stays at six people maximum, there's real attention happening. You're not standing in the back watching someone else's hands move. Two hours of actual cooking, which sounds like a lot until you're halfway through your second dish and realize you're not thinking about anything else. The tea comes first, something to settle in with, and then you cook.

Lunch or dinner happens in that same garden once everything's done. You eat what you made, which tastes different when it's yours — not better necessarily, just yours.
