The experience
The morning starts at Wanhua's historical market at 9:30am, not a polished tourist site but a real working market filled with the sounds, colors and aromas of everyday Taipei. Your guide introduces the market's history and its place in the neighborhood's daily life, then you spend the next hour and twenty minutes walking the vendor stalls. You learn what Taiwanese pantry staples look like, how to pick seasonal produce, and which snacks locals actually eat. Along the way you sample traditional treats (the kind visitors often walk past without knowing their stories), and select the fresh ingredients you'll cook with later.
At 11am you return to a cozy kitchen nearby, put on an apron and cook side by side as a group. The three dishes (Three-Cup Chicken, stir-fried mifen and a seasonal dessert) teach you the techniques and flavor combinations that have shaped generations of Taiwanese home cooking. This is not a demonstration. You're making the meal yourself, learning the stories behind each dish as you work.
At noon you sit down together and eat what you've cooked. The meal and the conversation that comes with it offer a genuine glimpse into how Taiwanese people eat and gather around food. Public transportation options are available near the market if you need them to get there.
