The experience

What does it take to make bubble tea the way locals do? Wayne's class answers that in the second half of the morning, but the day starts on foot. You'll walk through Taipei's oldest market with Wayne, stopping to talk with vendors and shop owners, tasting dishes most visitors never find. The market itself is the real classroom at first. You're learning how the city eats by watching people buy and sell the ingredients that matter.

After the market walk and street food sampling, you head to Wayne's cooking studio for the hands-on part. You'll make bubble tea from scratch, learning the technique and the timing, then drink what you've made. The studio is built around people and culture, not just technique. Wayne spent fourteen years in Melbourne before moving back to Taiwan, and he learned cooking from family, friends, cooking shows and recipe books. Italian and Chinese cuisine are both his favorites, and that background shapes how he teaches. You'll take home the recipes so you can make it again at home.

The group stays small, two to ten people, so there's room to ask questions and move at a pace that works. You'll meet other travelers from around the world, and the whole thing runs two hours.
