The Experience

Our chef, Luchito, hands you a knife and a lime before you've even set your bag down. He doesn't ask if you know how to cook — he just starts talking about the fish, the potatoes, the way the onion needs to sit in the juice, and suddenly you're moving. There are maybe ten other people in the kitchen, not fourteen, so you can actually see what he's doing. He laughs when someone asks if the pisco goes in the cocktail or the ceviche. The room smells like cilantro and salt and something you can't name yet.

You start with Causa de Pollo — layers of potato, avocado, and chicken that look simple until you taste them and realize the potato is the whole thing. Then comes Ceviche Limeño, the national dish, and Luchito walks you through why the raw fish works, how the acid cooks it, what the onion does if you leave it too long. He's not performing; he's just explaining something he's made a thousand times. If you don't eat fish, he has mushroom ceviche ready. If you're vegetarian, the causa works with avocado alone. You make a Pisco Sour at the end — pisco, lemon juice, sugar syrup, egg white, crushed ice — and by then your hands know what they're doing.

The whole thing takes a few hours. You eat what you've made, drink what you've mixed, and leave with printed recipes that actually work because you watched them happen.
