The Experience

You start at the bike shop near the medina, where the guides fit your helmet and bike before heading out. The route takes you past a neighborhood market to a local breakfast spot where you taste bisara—a soup made from flat beans—and loubia, a saucy white bean dish, sopped up with bread and mint tea the way residents do. From there you ride deeper into the old city, passing the Ali ben Yousseff Mosque and the Kasbah Mosque, built between 1185 and 1190, without stopping inside since bikes aren't permitted.

The medina's Mellah, the traditional Jewish quarter, is where the route slows down. You stop at a spice seller to learn how Moroccan spices work—what they are, how they're used, and the chance to buy if you want to. Then comes the main meal at a local restaurant: a Moroccan salad first, then your choice of tangia, couscous or tagine, finished with mint tea. There's a separate stop for cookies after, so the guide tells you to leave room.

The final stretch takes you into Jemaa el-Fna, the UNESCO World Heritage square where traders, storytellers and food vendors have gathered for centuries. You stop in the center for a cold glass of fresh orange juice and learn the history of the 12th-century Koutobia Mosque before navigating back through the medina's maze of streets to the shop, carrying the tastes and the route map in your head.
