The medina of Fez is a labyrinth with more than 9,600 narrow streets, and without a guide who knows it, you'll spend half the day retracing your steps. A licensed guide picks you up and leads you through the old city on foot, stopping at the major sites but also explaining the layout and the history as you walk. The Kairaouine Mosque and university, founded in the 9th century, is the oldest university in the world. Your guide describes its role in the city's intellectual life. You'll see Bou Inania Madrasa, the theological school built in the 14th century that draws more visitors than any other in Fez, and walk through Place Seffarine, where copper workers still hammer metal by hand the way they have for centuries.

The Jewish quarter, the Mellah, was established in 1435 and remains the oldest Jewish neighborhood in the city, with architecture and narrow passages that reflect centuries of family life there. You'll visit the Aben Danan Synagogue, built in the 17th century, and the Jewish Cemetery with tombs dating back to the 14th century. The Chouara Tannery is one of the most spectacular sites in the medina: a working leather production facility where you can watch the traditional moroccan process unfold in the open vats. Your guide also takes you to Zaouia Moulay Idriss II, the holy shrine of the city's founder, and to Borj Sud, a 14th-century military fortress from which you can see across the entire city.

The tour is five hours on foot through the medina's narrow passages, with bottled water and tea included to keep you going.
