The experience

The tour starts at Bab Boujloud, the blue gate that opens into the medina, and moves through the old city on foot with your guide explaining the architecture and the people who live and work there. You'll visit the Zaouia of Moulay Idriss II, where zellige tilework in blues and greens covers the façade and the interior holds the tomb of the city's founder, draped in rich fabrics and surrounded by intricate woodwork. The guide takes you through the University of Al-Qarawiyyin, founded in 859 AD and still one of the world's oldest continuously operating universities, so you can see the rare manuscripts in its library and feel the atmosphere of the adjoining mosque.

The Chouara Tannery is where the day becomes tactile. You'll stand above the dye pits and watch workers knee-deep in color, using techniques unchanged for nearly a thousand years. They soak raw hides in limestone and pigeon droppings, wash them, then dye them in natural colors: poppy for red, indigo for blue, saffron for yellow. Your guide explains the process and the history of leather-making in Fez. Place Seffarine, a square in the heart of the medina, is where coppersmiths hammer and shape metal the way they have for centuries, and the sound and the sight of it are part of what makes the square itself.

Transport between stops is in an air-conditioned vehicle, so you're not walking the entire medina in one stretch. Coffee or tea is included at a point during the tour.
