From there the route moves deeper into the Medina—a warren of passages too narrow for cars—and arrives at the Chouara Tanneries. This is where the leather gets its color: you stand above the vats watching artisans work hides in pools of dye using methods unchanged in generations. The smell is strong and the sight is vivid—the reds, yellows and browns staining the water and the stone.

The walk then takes you to the Karaouine Mosque, a UNESCO World Heritage site and one of the oldest universities in the world, with Islamic architecture that stops you mid-step. Next is the Attarine Madrasa, a 14th-century Quranic school where the zellige tilework and stucco carvings cover every surface—the detail is so dense it takes time to parse. The Nejjarine Museum of Wooden Arts and Crafts shows you how traditional woodworking shaped Moroccan craft, and Nejjarine Square itself, ringed by decorated buildings and centered on a tilework fountain, gives you a moment to breathe.
