The experience
You arrive at an intimate tasting room where a certified chocolate and cacao taster walks you through the world of fine Mexican chocolate. The session opens with a pre-Hispanic ceremonial-style chocolate (the recipe the Zapotec people of Oaxaca used thousands of years ago) presented in a modern, minimalist way that sets the tone. From there, you move through ten small-batch, award-winning pieces, each one handcrafted by Mexico's top chocolatiers and sourced directly from makers who work exclusively with fine-aroma cacao. These are not store-bought bars. Many exist only in limited editions and rarely leave Mexico.
As you taste, the guide unpacks what makes each chocolate distinct: how terroir shapes the cacao, what fermentation and roasting reveal in the flavor, the philosophy and craftsmanship of the maker behind it. You'll encounter single-origin cacao from biodiverse regions across the country, award-winning bars recognized internationally, and the evolution of aromas and textures across the flight. Between tastings, you eat cacao nibs with Greek yogurt and honey, sugar-coated cacao beans, and fresh fruit and nuts: each one designed to prepare your palate and highlight different notes in the chocolate that follows.
The whole arc takes about 100 minutes. You leave understanding why Mexico is now elevating cacao to a new level of luxury, and with access to chocolates and makers most travelers, and even locals, never encounter.
