The experience
Dotonbori's sushi class focuses on vegan and vegetarian ingredients from the start, so there's no substitution or compromise: the chef builds the curriculum around plant-based fillings and toppings. You'll make two styles: nigiri (the oval rice base with topping) and gunkan (the boat-shaped rice wrapped in nori). The instruction is hands-on. You work at your own station in a sushi-chef costume, handling real nori, seasoned rice and the knife techniques that separate a neat roll from a sloppy one.
The 90-minute session covers how to season the rice properly, how much pressure to use when shaping, and how to slice nori so it doesn't tear. By the end you'll have made 12 pieces you can eat right there. Japanese sake and beer are available to taste alongside your work: a small detail that anchors the class in the actual experience of eating sushi in Japan, not just the mechanics of rolling it.
