Toyosu Market opened in 2018 on a man-made island in Tokyo Bay and took over the wholesale business from the older Tsukiji. It's three connected buildings (two for seafood, one for fruits and vegetables), and your guide walks you through the observation deck first so you can watch the actual selling and processing happen below, vendors moving fast, ice everywhere, the smell of salt and something alive.

Then you head to Tsukiji, the original market that's been here since the land was reclaimed from the sea, and this is where the energy shifts. Your licensed English-speaking guide points out why Japan's top chefs come here daily. The fish is fresher than anywhere else in the city, and you can see it. You might spot piles of sea urchin stacked in boxes, watch vendors carve massive bluefin tuna, or see puffer fish floating in tanks.
