The experience
What sets this apart is that you're making sushi in Okinawa, where it's rare to find this kind of hands-on class. You start at Makishi Public Market, walking through the stalls where the fishmongers sell the fresh catch (local bonito, tuna, and other seasonal fish) that will become your ingredients. The instructor shows you what to look for and how the market works, then you move into the kitchen space to learn the technique. You'll roll eight pieces of sushi yourself, using fish the market has just sold you, and the instructor walks you through each step.
After you finish rolling, you sit down with the other participants and eat the sushi you made. The meal comes with red soup stock, gari, and green tea. If you want sake or beer to go with it, those are available for an extra fee: 1,000 yen for sake, 500 yen for beer. The whole experience takes about two and a half hours from start to finish. You'll get a RYUKYUMONO original tenugui towel to take home. If you need an apron, bring your own.
