The experience

Hoto is a thick handmade noodle dish from Yamanashi, made with vegetables in a miso broth and passed down through generations in the Mt. Fuji region. In this class, you work through the whole process yourself: kneading the dough, rolling it out to the right thickness, and cutting the noodles by hand. The instructors walk you through each step in a relaxed pace, so beginners, families, couples, and solo travelers all work at their own speed. All ingredients and equipment are provided, and you wear an apron and vinyl gloves throughout.

After you finish making the noodles, you cook them in the miso broth with vegetables and sit down to eat what you made. This is not a demonstration where you watch someone else work. You're doing the kneading and cutting yourself, which is what makes it stick in memory. The class accommodates food allergies, dietary restrictions, and religious requirements if you let them know in advance. Free parking is available on-site, and public transportation options are nearby if you prefer not to drive.
