The experience
Can you really make sushi in an hour? Yes, but not the kind most people think of. Inari sushi, the pouch-shaped variety filled with seasoned rice and your choice of toppings, demands more precision than nigiri. You'll work with a chef from Matsuya, a restaurant that has been teaching this technique for 188 years, and the instruction is hands-on: you fold, you fill, you taste the difference between a loose pouch and a tight one. The 11-plus ingredients available let you build something that reflects what you actually like to eat, not what a template says you should make.
The session runs 60 minutes start to finish. You make the sushi, then sit down to eat it while it's still warm, alongside red miso soup or vegetable soup (your choice), a block of tofu, coffee and a small dessert. The pace is relaxed. This is not a race to produce ten pieces. Vegetarian-friendly options are built into the ingredient selection, so the experience works for a wide range of diets. A live guide in English or Japanese walks you through each step, so language is not a barrier.
Matsuya sits in Toyokawa, in Aichi Prefecture, and is reachable by public transportation. The space is wheelchair accessible, and so are the transportation options nearby, so mobility does not rule you out.

Is this one for you?The 60-minute session leaves the rest of your day open, so you can fit this into a morning or afternoon without clearing your whole schedule. If you want a deeper dive into sushi-making technique, look for a longer workshop. This one prioritizes the hands-on moment and the meal over extended instruction.

Top questions
What languages is the tour guided in?
Live guide in English and Japanese.
What exactly is inari sushi, and how is it different from the sushi I've seen before?
Inari sushi is a pouch of fried tofu skin filled with seasoned rice and toppings: a completely different construction from nigiri or rolls. The pouch has to be folded tight enough to hold the filling without tearing, which is why the chefs say it's more challenging to master than nigiri.
Do I get to eat what I make, or is it just a demonstration?
You eat what you make. After you finish folding and filling your sushi, you sit down in the same space and have your creation alongside miso soup, tofu, coffee and dessert as part of the 60-minute experience.
Are there vegetarian options, or is fish a requirement?
Vegetarian-friendly options are built into the ingredient selection, so you can make and eat inari sushi without any animal products if that's what you prefer.
