The Appleton Estates Rum Tour walks you through how rum has been made since 1749—you see the distillery, the aging house, taste three different rums, and leave with a bottle or two if you want. Black River Safari puts you on a pontoon boat for a 4-mile ride upriver where you'll spot crocodiles in their habitat, then visit the Crocodile Nursery to get close to rehabilitated ones. Floyd's Pelican Bar is the wildcard: it's a driftwood bar built on a sandbar about a quarter mile out in the sea, reachable by boat, and it's exactly as casual and memorable as it sounds.
