The experience
You arrive in Montepulciano with a free afternoon and no plan to fill it. This class gives you one: you'll spend four hours in a kitchen learning to shape handmade pasta the way Tuscan cooks have for generations. A local chef leads the work, showing you how to roll pici by hand, layer fresh dough for ravioli, and cut tagliolini to the right thickness. Each pasta you make gets paired with a sauce. The pici goes with a slow-cooked Tuscan meat ragù, the tagliolini with seasonal vegetables from nearby farms. You're not watching a demonstration. You're doing the work yourself, your hands in the dough.
Wine flows throughout, and lunch is the meal you've just cooked. The class includes soda, water, coffee and tea, so you're fed and hydrated for the full afternoon. At the end, you walk out with printed recipes, which means the dishes you learned don't stay behind in Italy. You can remake them at home and have the flavors stick around longer than the trip itself.
