Sardinian Cooking Class in Cagliari: Make Culurgiones
Make Sardinian pasta in a local kitchen, then eat what you cooked
A five-hour cooking class in a private Cagliari home where you make culurgiones (Sardinian stuffed pasta) and other local dishes from scratch, then share lunch with wine and traditional appetizers. Your host Damiano teaches his grandmother's recipes using inherited cooking skills. The class suits all levels and runs in English or Italian.
The experience
Five hours in Damiano's kitchen means real time at the counter, not a rushed demo. You make culurgiones with several different fillings (Pecorino cheese, tomato sauce, or fried and roasted) learning the hand techniques that shape the pasta. The class is built for all levels, so you're not expected to arrive knowing anything. Damiano walks you through each step of his family recipes.
Before you cook, you taste what Sardinia actually eats: aged Pecorino from shepherds in Desulo or Gavoi, dried sausage seasoned with fennel and pepper, bottarga (salted cured fish roe), and artichokes. These aren't side notes. They're the foundation of how the island cooks. Then you move to the pasta, building the dishes you'll eat for lunch. The menu shifts based on what you make: culurgiones with Pecorino, with tomato sauce, or prepared another traditional way.
Lunch happens at Damiano's table with red wine, white wine, water and a digestif. You eat the pasta you made, in the home where the recipes came from. Public transportation runs nearby if you need it. Just let Damiano know ahead of time about any food allergies or dietary needs.
