The experience
How do you learn to cook like someone from Cinque Terre without spending a week there? You show up in Vernazzo and make it yourself. The class starts with flour, eggs, water and your hands: you mix the dough for mandilli, the delicate fresh pasta cut into small squares that is typical to this coast. While the dough rests, you move to the marble mortar and pound basil, pine nuts, garlic, salt, cheese and olive oil into pesto the way it's been done here for centuries, not blended smooth, but textured and alive. Then you boil the pasta you made, toss it into that same mortar with the pesto you just finished, and eat it.
The meal comes with a glass of local white wine to drink alongside. Kids get a soft drink instead. Limoncino on the rocks closes it out. Water is provided throughout. The whole thing takes ninety minutes, which means you can fit it into a morning or afternoon without losing the rest of your day in the village. Guides conduct the class in English, Italian, or French, so you get instruction in the language you need.
