Roll pasta by hand, then taste what you made.

A small-group pasta and tiramisu class in Vicenza where you learn to roll sfoglia (fresh pasta) by hand and make two different pasta types from scratch, plus the iconic tiramisu, in a local home with a Cesarina (home cook). The class runs three hours, includes an Italian aperitivo with prosecco and nibbles, wine, and tastings of everything you prepare. Groups stay under twelve people, and the guide speaks English or Italian.

The experience

What makes this different from a cooking demo is that you're the one rolling the dough. A Cesarina (a member of Italy's network of home cooks who open their kitchens to travelers) will teach you how to work sfoglia (fresh pasta) by hand, then guide you through making two pasta types: one filled, one fresh. You taste each one as you finish it, and the class ends with you making tiramisu from scratch. The whole thing takes three hours and happens in her home, not a commercial kitchen.

You start with an Italian aperitivo (prosecco and nibbles) to settle in. From there, it's hands-on: your Cesarina walks you through the techniques her family has used for years, and you work alongside other guests (no more than twelve in the group). Water, wine and coffee come throughout, and you leave with the recipes and the muscle memory of how to do this at home.

What’s included

  • Italian aperitivo with prosecco and nibbles.
  • wine, water and coffee.
  • all ingredients and equipment for making two pasta types and tiramisu.
  • tastings of everything you prepare.
  • instruction from a local Cesarina in her home.
