The experience
Three hours in a Spoleto home kitchen, and you'll walk out knowing how to roll sfoglia (fresh pasta) by hand, shape two kinds of pasta from scratch (one filled, one fresh), and layer tiramisu the way your host's family has made it for years. The Cesarina who teaches you opens her own kitchen to small groups, no more than twelve, so there's room to ask questions and watch her hands work the dough. You start with an Italian aperitivo of prosecco and nibbles, then move straight to the counter.
The work is hands-on from the start: you're not watching a demonstration, you're rolling the pasta, filling it, shaping it. Your host walks you through the family method, the shortcuts that work, the mistakes to skip. By the end of the class you taste everything you made (both pasta dishes and the tiramisu) with wine, water and coffee included. You leave with the official Le Cesarine apron, which means you can try this at home.
Le Cesarine is Italy's oldest network of home cooks, all of them locals who open their kitchens to travelers looking for something real. This is not a cooking school with a commercial kitchen. It's a family home where the host has invited you to learn the way she learned. Public transportation runs near the location if you need it to get there.
