The experience
Marianna, one of the two producers who run this collaboration, meets you at the Trebbiano Modenese DOP vineyard and takes you on a relaxing walk among the cherry trees to the acetaia itself. What makes this different from a standard tour is that you're learning directly from someone whose family has guarded the secrets of balsamic vinegar production for generations. She walks you through the barrel room where the vinegar ages, and you'll smell the real thing as it develops: the scent that fills the space is what you won't find in a commercial bottle.
The tasting comes at the end, after you've seen where the product is made. You'll taste traditional balsamic vinegar of Modena PDO alongside Parmigiano Reggiano and other organic gourmet condiments from the region. By that point you'll understand the difference between what's certified and what's just labeled balsamic, and why the real version costs what it does. You can buy products to take home if you want to extend the experience beyond the visit.
