A hands-on cooking class in Corigliano d'Otranto, 15 minutes from Lecce, where you learn to shape traditional orecchiette and maccheroncini from scratch in Enza's family home, then sit down to a full dinner with local wine, homemade dessert and limoncello. The evening runs about three and a half hours and includes aperitif, wine, coffee and tea; vegan, vegetarian and lactose-free options are available, and children are welcome.

The Experience

The class starts with an aperitif—homemade bread, local cheeses and salami, olives from the garden, prosecco—while you settle in by the pool or fireplace depending on the season. Then Enza and her family walk you through making orecchiette and maccheroncini, the two pastas that anchor Puglian cooking. You shape each piece by hand using durum wheat flour and recipes passed down through generations. There's no lecture; you work at your own pace, and the family moves around the table, adjusting your grip, showing you the motion again.

Once the pasta is ready, it goes into the pot. While it cooks, the table fills with the rest of dinner: maccheroncini with mussels and clams, a chickpea cream pasta made from Enza's grandmother's recipe using vegetables from Mamma Lucetta's garden, local wine poured into glasses. You sit down together, and the evening becomes what it was always meant to be—a meal, not a performance. Conversation and music fill the room; if you want to play, a piano, guitar or saxophone is there.

Dessert arrives homemade: jam tart or chocolate salami made with dark chocolate and wholemeal biscuits. Then limoncello, coffee or tea, and a small keepsake of the evening. The house is wheelchair accessible, and the pool is available if you want to use it before or after. Children and infants are welcome; specialized seats are provided.
