The Experience

Four hours is the window for this afternoon tour, timed between lunch and dinner. You get picked up at your Dublin hotel in a private Mercedes, and the specialist host meets you there—someone who knows the Irish whiskey scene and can talk you through what makes it different from Bourbon, Scotch or Japanese whiskey. The route moves through three distilleries, each one a different kind of stop.

At Roe & Co in the Liberties neighbourhood, you're part of a small group for the Flavours Experience: you make one whiskey cocktail yourself, then taste two Roe expressions. The Liberties is the old heart of Dublin's whiskey and beer trade, and the host will tell you why it matters. From there you head to Jameson Distillery Bow St., where the real draw happens—literally. You enter the maturation warehouse onsite and pull a cask, then taste the rare 18-year-old Jameson cask-strength whiskey straight from it. This is the shared experience, but it's the one people remember. At Teeling, the newest distillery on the trail, you walk the distillery floor to see how they work, then move to the bar for a private tasting of three different Teeling expressions: Small Batch, Single Grain and Single Pot Still.

The host is there the whole time, filling in what each stop doesn't cover on its own—the history, the process, the reason Irish whiskey tastes the way it does. You're not following a script; the tour adjusts to what you want to know. Weather doesn't stop it, and the tour runs year-round.
