The Experience

The first thing that hit me was the smell—warm sugar and something toasty, almost like standing too close to a campfire but sweeter. We squeezed into this bright little studio just off one of Budapest’s busier streets, aprons already waiting for us. Our host, Zsófi, greeted everyone with this easy smile and started telling stories about how chimney cakes (kürtőskalács) used to be made at festivals. I didn’t catch every word (my Hungarian is non-existent), but you could feel her pride in it.

I’ll admit, rolling out the dough looked way easier than it actually was. Mine kept sticking to the table and I had flour on my nose before we even got to the wooden spindles. Zsófi showed us how to wrap the strips just tight enough so they’d bake evenly—she made it look effortless. The rotating grill was hypnotic; you could hear the sugar crackle as it caramelized. Someone picked cinnamon sugar for their topping and suddenly the whole place smelled like December markets. I chose walnut because Zsófi said it’s her favorite—she winked when she handed me extra.

We all laughed when someone tried to pronounce kürtőskalács (I’m still not sure I got it right). Eating that warm chimney cake straight from the grill—soft inside, crisp outside—was honestly better than any dessert I’ve had in a fancy restaurant.
