Pan-fried snapper, aubergine balls and tropical trifle, plated as the chef works three feet away.

A three-hour dinner in a Georgetown home garden where a trained international chef cooks classical Guyanese cuisine in front of you, explains the ingredients and techniques as he works, and finishes with a private guitar concert. The meal includes wine pairings and three courses built around local grass-fed beef, fresh fish, prawns, and garden vegetables and fruits. A guide in English or German walks you through each dish as it comes together.

The experience

The meal happens in the chef's own garden, lit by candlelight and stars, surrounded by herb plants and fruit trees. You watch Eon John cook the entire three-course dinner from start to finish: pan-fried snapper with hollandaise sauce and garlic bora, aubergine balls with spiralized zucchini and spicy ragout, and tropical fruit trifle with coconut crème pâtissière. As each dish moves through the kitchen, he explains what he is doing and why, so you understand the technique and the sourcing behind every plate.

Wine comes with the meal, chosen to complement each course. Once you finish eating, Eon John sets down his chef's knife and picks up his guitar for a private concert in the same garden. The whole evening runs three hours from start to finish.

Is this one for you?You watch the chef cook the entire meal in front of you rather than eating in a separate dining room, so you see the technique and sourcing that goes into each plate. This suits anyone who wants to understand how the food is made, not just taste it. The evening is built around one chef and his garden, so it is an intimate experience rather than a group dinner service.
