The experience
You'll spend the morning or afternoon in a professionally equipped kitchen learning to cook an array of Greek dishes that rarely appear on restaurant menus. The class covers the full arc of a Greek meal: you'll prepare appetizers like anchovies in vine leaves with fennel, a courgette and goat cheese pie, salads, a main course (options include cumin and garlic meatballs in tomato sauce or chickpeas with rosemary), and a dessert such as sweet milk pie or semolina halva. Along the way, the instructor shares the local traditions and origins behind each recipe, so you understand not just how to cook but why these dishes matter to Syros.
The hands-on part is the whole point: you're not watching a demonstration, you're using new ingredients and new techniques with your own hands. You'll learn how to work with things you may have never cooked before, and how to use familiar ingredients in ways you haven't tried. Menus shift with the seasons, so what you prepare depends on what's fresh when you book. If you want the meal accompanied by local wine, that's available to add.
When the cooking is done, you sit down together in the courtyard and eat everything you've made. Before you leave, all the recipes are sent to your email so you can recreate the dishes at home.
