Three hours in the kitchen means you move through five dishes without rushing. You start with the fundamentals—how tzatziki comes together, the layering that makes a spinach pie hold its shape, the rolling technique for dolmades—and build toward the centerpiece: preparing gyros meat and baking your own pita bread. The chef walks you through each step, explaining not just the how but the why behind the technique, so you understand what you're doing well enough to repeat it at home.
The class is built around making a meal together. As you finish each dish, it becomes part of lunch—you eat what you've cooked, paired with Greek wine and water. This is not a demonstration you watch from a stool; you have your own workspace and kitchen equipment, and your hands do the work.
