The experience

You start with phyllo dough, learning the traditional technique to stretch it thin by hand. While the spanakopita bakes, you prepare fried zucchini balls (kolokythokeftedes) and a cucumber yogurt dip (tzatziki) using herbs and vegetables picked that morning from the farm's garden. The class opens with mountain tea or homemade sour cherry juice, and closes at the table with the pie you made, a fresh seasonal salad, and wine from a Greek vineyard.

The whole experience runs 3.5 hours and stays on the farm. Your guide speaks English and walks you through each step: stretching the dough, filling it, seasoning the sides. Bottled water and snacks are provided throughout. The class takes a minimum of two people. Infants can attend and sit on an adult's lap if needed.

What is spanakopita and why is the phyllo technique important?

Spanakopita is a traditional Greek pie filled with spinach, feta and herbs, wrapped in thin layers of phyllo dough. Hand-stretching the phyllo is the traditional method. It creates the delicate, flaky texture that makes the pie distinctive, and it's a core skill you learn in this class.
