The experience
You arrive at the farm and start right away. The guide walks you through the ingredients (many of them growing on the property), and you move into the kitchen to begin. You'll make Greek salad, tzatziki, riganada, briam, pita with filo dough, lamb chops, and halva for dessert. The work is hands-on: you're chopping, mixing, rolling dough, cooking at the stove. This isn't a demonstration where you watch someone else work. You're the one doing it, with the guide showing you the technique and the reasoning behind each step.
Once everything is cooked, you gather around a family-style table on the farm and eat what you've made. House wine and water come with the meal, along with tsipouro, the traditional Greek spirit. The food tastes different when it's your own work, and the setting (a working farm in the Ionian Islands) anchors the whole thing in the place itself. You're not in a cooking school in a city. You're on the land where some of the ingredients come from.
The class runs three and a half hours total. You'll need to be reasonably comfortable standing and working in a kitchen. The farm is accessible by public transportation if you don't have a rental car. Children from age 13 can join. Bring an appetite and clothes you don't mind getting flour on.

What dishes do I actually make during the cooking class?
