The day starts at a traditional market, where you learn to look, smell and taste the way a connoisseur does: recognizing which products are truly authentic and why. From there you move to a working farm to taste Basque cheeses, traditional cooked dishes, cold meats and apple juice straight from the producer. A cheese factory and a farmer butcher follow, each one still using ancestral methods. Lunch happens in a typical Basque restaurant where you eat a plat typique Basque, the kind of dish locals order.
After lunch, a wine and cider grower walks you through tastings of apple juice, ciders, wines and other local drinks they make. The final stop is a store run by local farmers, stocked with meat, foie gras and other regional products you can buy to take home. Throughout the day, the guide, trained specifically in food authenticity, explains not just what you're tasting but who still makes it this way and why the methods matter. You'll taste and drink far more than you would on your own, and you'll understand what separates authentic Basque food from everything else.
The experience runs from 10am to 4pm. Pickup is included if you're staying in Biarritz or St Jean de Luz. Groups stay small: 2, 3 or 4 people only, so the pace stays unhurried and the guide can answer real questions. The price drops as your group grows: 249€ per person for two, 219€ for three, 199€ for four.
