The Experience
There’s this moment when you walk into someone’s home in Cairo—shoes off, the air thick with cumin and something green simmering (molokhia, I learned later). We’d barely set our bags down before Amira handed us sweet tea and started laughing about her kids’ English homework. Her husband waved us to the kitchen like we were cousins who just hadn’t visited in a while. I didn’t expect to feel that welcome so fast.
The cooking class part was less “lesson” and more like joining a busy family meal prep. Our guide—well, really just Amira’s sister-in-law—showed me how to stir molokhia without turning it stringy. She let me taste it right off the spoon (it’s got this earthy smell, almost grassy but rich). I tried chopping onions Egyptian-style—let’s just say there was a lot of giggling at my technique. The whole place felt alive: clattering pans, kids running through, someone humming from another room.
Dinner happened around a low table with everyone squeezed in. There was bread still warm from the oven, pickles that nearly made my eyes water, and this chicken dish I can’t pronounce (Li laughed when I tried to say it in Arabic—probably butchered it). Stories bounced back and forth between Arabic and English; sometimes we just used hand gestures. At some point I realized I’d stopped thinking about being a tourist in Cairo and just felt…part of it all. That’s rare for me. Even now, whenever I smell garlic frying back home, it takes me right back to that kitchen.
