The Experience

We met Samir outside our hotel just after sunset — he waved with one hand and balanced a bag of something in the other (turned out to be fresh dates for us). He grinned and said, “Ready for Cairo at night?” I didn’t really know what to expect. We set off in his car, windows down, city air thick with grilled meat and sweet smoke from shisha bars. The Nile shimmered under the streetlights as we strolled its corniche; there was this couple arguing softly near the railings, but laughing too — it made me smile for some reason.

The best part? The food. I’m still thinking about that first bite of koshary — all those layers: noodles, lentils, fried onions, tomato sauce. Samir explained how every Egyptian has their own “right” way to eat it (I definitely did it wrong). We tried shawarma from a tiny stall where the owner called out jokes in Arabic to passing kids. Falafel here is green inside — so much fresher than what I’d had back home. My fingers smelled like cumin and parsley for hours after.

Walking through Islamic Cairo felt like stepping into another century. The old city gate was chipped but proud; Samir pointed out bullet marks from some revolution I’d never learned about in school. At El-Hakem mosque, there was this hush — even with the city noise outside. We wandered through Khan el-Khalili market where vendors tried to guess where we were from (“Italy? Spain? No? Canada?”). I bargained badly for a scarf and ended up paying too much but didn’t mind. Our last stop was El-Feshawi cafe: mint tea so strong it nearly knocked me over, brass tables sticky from decades of sugar spills. Some old men played dominoes and one winked at me when I stared too long.

I left feeling both full and kind of light — like Cairo had let me peek behind its curtain for a night. It’s not polished or easy to describe exactly; you just have to walk it yourself.
