The Experience
We stepped out of the car straight into the noise and color of downtown Cairo, our guide Mahmoud waving us toward a little alley that honestly didn’t look like much. The air smelled like fried onions and something sweet — maybe that sesame stuff? Anyway, we followed him past a shop where two guys were arguing (or maybe just talking loudly — still can’t tell), and he grinned at us like he knew what was coming. First stop: koshari. I’d heard about it but didn’t expect the mix of lentils, pasta, spicy sauce to actually work. But it does. Mahmoud showed us how to pour on the garlic vinegar — “not too much if you want to breathe later,” he laughed.
After that it was falafel (they call it ta’ameya here) from a stall where the cook handed me a piece straight from the fryer. Burned my fingers but worth it — bright green inside from fava beans, nothing like what I’d had back home. We wandered through streets lined with old bookshops and tiny clothing stores; Mahmoud pointed out one that’s been around since his grandfather’s time. Somewhere along there we tried this weird salty cheese pastry I still think about sometimes when I’m hungry at midnight.
