The experience
The farm sits in the coastal region where Ecuador grows some of the world's most valued cocoa. You start by walking the plantations and choosing the organic vegetables and herbs you'll cook with: the ingredients come straight from the ground to your kitchen. Then you move into the cooking class itself, where you learn to prepare typical Ecuadorian dishes: chicken stew with beer and naranjilla, ceviche with fresh fish, yuca fritters, fried plantain. You cook alongside your guide, who teaches the techniques and the stories behind each dish, and then you eat what you made.
After lunch, the focus shifts to chocolate. You'll taste the raw cocoa fruit and learn what makes this region's cocoa prized: the fermentation, the drying, the flavor compounds that develop. Then you move into the artisan workshop where you roast the beans, grind them, refine the paste, temper the chocolate and shape it into bars or bonbons. You choose the cocoa percentages and flavors you want, so each person leaves with chocolate they made themselves. By the end of the afternoon, you've moved from harvest to finished product.
