“You’re gonna get muddy,” our guide grinned as he handed me a helmet at the ranch outside Punta Cana. He was right. The ATVs rattled to life and I could already smell the wet earth — that mix of clay and green stuff you only get after rain. We lurched off in a line, engines buzzing louder than the cicadas, bouncing over ruts between palm trees.
