The experience

The three wineries differ in how they make wine and what they produce. You'll see cellars where grapes macerate for weeks, age in wooden barrels, or ferment in stainless steel tanks. The wines come from indigenous Istrian grape varieties (Malvazija, Teran, Refosco), and from blends with international grapes. Between the first and second winery, you stop in Grožnjan, a stone village perched on a hilltop and known for its galleries and artist studios. The break gives you time to walk the narrow streets and look around before heading to the next tasting.

Each winery pairing includes fresh and aged wines tasted together, so you can taste how time in the barrel changes the flavor. The snacks that come with the tastings (Istrian cheese, sausages, bread, olive oil) are local products chosen to match what you're drinking. By the time you reach the third winery, you've tasted fifteen to twenty wines across the day and learned how the same grape can taste different depending on how long it sits on its skins or how old the wood is that it ages in.

After the last winery, the day ends with a 4-course dinner at a family-owned restaurant. The menu draws on traditional Istrian dishes but prepared with a modern approach. An air-conditioned Volkswagen Touran carries your group. The driver is also your guide and speaks English or Polish. The tour runs in all weather, so bring a jacket if the forecast calls for rain or wind.
