“Don’t burn the garlic!” That’s what our chef—María, I think she said—kept teasing me about as we all crowded around the stove in La Fortuna. But everyone was relaxed, even when I nearly dropped a spoon into the beans. We learned how to make gallo pinto and something with plantains that I still can’t pronounce. María showed us how she mixes spices with this quick flick of her wrist—she said it’s all about “feeling” the food, not measuring. That stuck with me.
Dinner was loud—people swapping stories across the table, steam rising off our plates. It felt like one of those family meals where nobody wants to leave yet.
