The Experience
“Don’t burn the garlic!” That’s what our chef—María, I think she said—kept teasing me about as we all crowded around the stove in La Fortuna. The kitchen smelled like cilantro and sweet peppers, and honestly, I was a little nervous holding the knife (I’m not exactly known for my chopping skills). But everyone was relaxed, even when I nearly dropped a spoon into the beans. We learned how to make gallo pinto and something with plantains that I still can’t pronounce. María showed us how she mixes spices with this quick flick of her wrist—she said it’s all about “feeling” the food, not measuring. That stuck with me.
Dinner was loud—people swapping stories across the table, steam rising off our plates. It felt like one of those family meals where nobody wants to leave yet. The rice had this earthy taste and there was fresh lime everywhere; I kept going back for more even though I was full. Someone asked about “Pura Vida” and María just grinned and shrugged, like it’s too big to explain in words. Maybe it is.
And then suddenly we were clearing chairs away for salsa lessons. The music kicked in—louder than I expected—and our dance teacher (Luis? Or maybe it was Leo) clapped his hands and yelled “¡Vamos!” My feet did not want to cooperate at first. But nobody cared if you messed up; actually, it made things funnier. At one point my partner spun me so fast I nearly crashed into the wall—everyone laughed, including me. There’s something about learning salsa in Costa Rica that just makes you feel lighter, even if you’ve got two left feet.
