The Experience
The Cuttlefish cuts through the water south toward Bruny Island, and you're standing on the upper deck watching the coastline narrow into towering cliffs and empty beaches that have no road to them. The catamaran is two stories, built for comfort, and the ocean is calm enough that you can hold a glass without thinking about it. Around you are maybe a dozen other people — the tour runs with a minimum of four adults, so groups stay small — and everyone is here for the same reason: to eat seafood that was swimming an hour ago.
The day starts with a seasonal fruit platter and Tasmanian cheeses while you cruise. Then the boat slows near Bull Bay. One of the divers — they've all got years in the fishing industry — goes over the side in a wetsuit and comes back with a mesh bag of live periwinkles and sea urchins, still moving. On the open cook station built into the boat's deck, he works fast, cracking shells, explaining what he's doing, and handing you plates while the water is still visible through the railings behind him. Oysters come next, served natural and kilpatrick. Then abalone, rock lobster, mussels, whole Atlantic salmon. Each one tastes like the ocean tastes when you've just watched someone pull it out.
Tasmanian beer, wine and sparkling are included, and they keep coming. You'll see dolphins sometimes, or seals hauled out on rocks, or if you're lucky, whales moving past the cliffs. The fresh-baked apple cake arrives at the end, and by then you've stopped thinking about time. The whole Tasmanian seafood experience takes the day — it's not a quick lunch — and the fixed group size means you're not fighting for space at the cook station or waiting in a queue for your turn to eat.
