The Experience

The Cuttlefish cuts through the water south toward Bruny Island, and you're standing on the upper deck watching the coastline narrow into towering cliffs and empty beaches that have no road to them. The catamaran is two stories, built for comfort, and the ocean is calm enough that you can hold a glass without thinking about it. Around you are maybe a dozen other people — the tour runs with a minimum of four adults, so groups stay small — and everyone is here for the same reason: to eat seafood that was swimming an hour ago.

The day starts with a seasonal fruit platter and Tasmanian cheeses while you cruise. Then the boat slows near Bull Bay. On the open cook station built into the boat's deck, he works fast, cracking shells, explaining what he's doing, and handing you plates while the water is still visible through the railings behind him.
