The experience
Dong Ba Market is the biggest in Hue, and the tour starts there so you can see the ingredients that define the city's cooking. Walking through with your guide, you spot what goes into the dishes you'll eat later: the fresh herbs, the pork cuts, the rice. Between the market and the tastings, your guide explains the customs and history behind what Hue eats and why. The kind of context that makes the food make sense.
The stops themselves are not restaurants. You eat rice pancakes (bánh hoai) topped with pork, shrimp, and bean sprouts at a stall that makes them fresh; salted coffee, a drink unique to Hue that tastes nothing like what you'd order in Hanoi or Saigon; grilled ground pork on a stick, smoky and juicy; steamed rice dumplings and tapioca dumplings from a family house that buys ingredients at the market every morning instead of stocking a freezer. The last stop is chè, a Vietnamese sweet soup served as dessert. The cyclo moves you between these places, so you're not walking the whole time, and the pace gives you room to talk to your guide about what you're tasting.
The tour runs three to four hours and includes cold water and wet tissues between stops. Your hotel pickup and drop-off are built in, as are all entrance fees and the cyclo ride itself. The guide speaks English and has over 15 years organizing these tours for international visitors.

Top questions
What is Dong Ba Market like, and what will I see there?
Dong Ba is Hue's largest market, filled with the fresh ingredients locals use to cook: herbs, produce, pork, seafood. On the tour, you walk through to understand what goes into the dishes you'll taste later and see how the city's food business actually works, not how it looks in a guidebook.
Is salted coffee really only found in Hue?
Yes. Salted coffee is a Hue specialty that does not exist in other Vietnamese cities. Hanoi is known for egg coffee and Saigon for iced milk coffee, but the salted version is unique to Hue and worth tasting to understand why the city is proud of it.
Will I eat at restaurants, or are these street stalls?
These are family-run stalls and street vendors, not formal restaurants. You eat rice pancakes at a stall, dumplings at a family house, and other dishes at local spots where Hue residents actually eat. That is the point: the real taste of the city, not the tourist version.
How much walking is involved?
The cyclo moves you between stops, so you are not walking the whole time. You walk through Dong Ba Market and between some nearby stalls, but the cyclo handles the longer distances, making the pace manageable over three to four hours.
What is included in the price?
Hotel pickup and drop-off, all the food tastings, cold water and wet tissues, entrance fees at each stop, the cyclo ride with a driver, and an English-speaking guide are all included. Tips for the guide and driver are separate.
