The Experience

I spilled a bit of condensed milk on the table before we’d even started—classic me. Our instructor, Thao, just grinned and handed me a napkin, saying something like “it’s good luck if you make a mess first.” That set the tone for the whole coffee workshop in Phu Quoc: relaxed, friendly, not precious about perfection. The room smelled like roasted beans and sweet milk, and outside you could hear scooters zipping by every now and then. We were a small group—just two other travelers and me—so it felt more like hanging out than a formal class.

Thao walked us through the basics of Vietnamese coffee beans—robusta versus arabica—and let us touch the raw beans. They felt rougher than I expected. We tried making black coffee using the phin filter (I always thought those looked complicated but honestly it’s kind of meditative watching the drip). Then came brown coffee with condensed milk—so sweet I almost winced at first sip but then immediately wanted more. The real surprise was egg coffee; I’d heard about it but didn’t expect it to taste so much like dessert. It’s creamy and somehow doesn’t feel heavy, which is weird because there’s egg yolk in there. Thao laughed when I tried to say “cà phê trứng” in Vietnamese—I probably butchered it.

The coconut coffee was my favorite, though salt coffee was the one that stuck with me after (who puts salt in coffee? But it works). The workshop included all the ingredients and recipes so you can try again at home—though I doubt mine will taste as good without that humid Phu Quoc air or Thao’s gentle teasing. By the end we each made our own “signature” cup; mine was a little too strong but nobody judged. There’s something about sharing awkward attempts with strangers that makes everything better.
