The experience
You spend three hours in the kitchen learning to work with puff pastry, prepare salmon and balance savory fillings. The class starts with olive tapenade (you'll learn the technique for building flavor with olive oil, pine nuts and pepper), then move to the salmon Wellington itself, wrapping the fish in flaky pastry with Boursin cheese and roasted mushrooms. The final course is chocolate chip cookies infused with rum and walnuts, a way to finish the meal that you'll be able to recreate at home.
A local chef guides you through each step, and the class is designed to work with dietary needs if you mention them in advance. All the fresh ingredients are there waiting, along with the kitchen equipment you'll use. Guests are welcome to bring wine or beer to enjoy during the meal.
When the cooking is done, you sit down and eat the three courses you've prepared. Take-home recipes for every dish go with you so the techniques stay useful after the class ends.
