The experience
You walk into the Windsor Inn, Cambridge's oldest free-standing residence in the central square, and spend three hours learning the essential techniques for making dumplings. Marc and Patty, who have run the longest-running dumpling party in the country since 2011, guide you through rolling, stuffing and folding 4-5 different styles: each one a distinct shape and fold. The instruction moves beyond the basics: you get the tips and tricks that make the difference between a dumpling that holds together and one that doesn't, woven through games, trivia and stories about how these dishes fit into Chinese and Taiwanese culture.
Halfway through, you sample Taiwanese street food bites. By the end of the three hours, you've made enough dumplings to sit down and eat a full dinner from what you prepared. The class wraps with recipes you take home so you can recreate what you learned. Tea is included throughout, and you're welcome to bring your own wine or beer.
The class welcomes all skill levels and runs as a public session, so you'll be cooking alongside other people in Cambridge who signed up the same way. If you have food allergies or dietary restrictions, let the hosts know when you book. Parking is available on site, and public transportation stops are nearby if you prefer not to drive.
