You board at Dubai Harbour, a waterfront neighbourhood positioned between Palm Jumeirah and Bluewaters Island, within sight of Ain Dubai and the Burj Al Arab. The superyacht itself is the setting: Encore is a tri-deck vessel where the dining unfolds across multiple levels, each course timed to the rhythm of the live DJ and the shift of the skyline as the evening deepens. The Omakase menu is not fixed. It evolves with what the master chef sources, so what you eat changes with the season and the market. Saikyo Miso-Glazed Black Cod, Golden Crispy Rice topped with spicy tuna, salmon or yellowtail, and other selections arrive one at a time, each bite a single statement rather than a plate to share.

Free-flowing Prosecco and unlimited premium cocktails run throughout the three hours, paired to each course or ordered on your preference. The live DJ shapes the mood as the night moves.
